- Crispy on the outside and soft on the inside, cavallucci resemble those from Siena.
The Seahorses
Every single seahorse is hand-shaped by our pastry chefs, which is why it's impossible to find two that are exactly alike. But that's how we like to make them: using a completely artisanal process.
Popular even at the court of Lorenzo the Magnificent, the “cavallucci”—the ancient “biriquocoli”—are a dessert that keeps for a long time. Just like the memory of it.
Features
Known in the time of Lorenzo the Magnificent as “Biriquocoli,” cavallucci are one of Siena’s most traditional sweets. They are made by hand using high-quality ingredients, including flour, candied fruit, sugar, walnuts, honey, coriander, and anise seeds. We ensure that our ingredients are always fresh and sourced from the best farms. Every single cavalluccio is skillfully kneaded and shaped by hand by our pastry chefs. Once it has taken the desired shape, the cavalluccio is ready to be baked. Once cooled, the cavallucci are packaged in sealed food-grade bags. They are crisp on the outside and soft on the inside. The treat has a distinct aftertaste of anise and candied fruit.
